Have you ever had one of those days when you feel like you need to include more veggies and fruit in your daily diet?
Well, this dish is a sure way to get a healthy and tasty portion of vegetables and fruits into your daily regimen. I enjoyed creating this simple idea using an eggplant as the primary ingredient. The only cooking involved to create this dish is to pan grill the onions, kale and eggplant. When I pan grill my vegetables, I use unsalted butter and canola oil for sautéing and add a variety of herbs, garlic, and unsalted seasonings to the pan. Feel free to experiment to your liking.

Black Berries
Pears
Garlic
Salt-Free Seasoning
Basil
Unsalted Butter
Canola Oil
Cherry Tomato
Kale
Onions
