If you are looking for a meatless pasta with a lot of flavor, then this vegetable pasta recipe is for you. 

This concept began when I noticed the bottle of red wine that I had was now half full ... and because I love to add red wine to my tomato sauces, the remaining portion became just the perfect ingredient to help produce this dish.



Ingredients:
Cherry Tomatoes
Tortellini/whole wheat
Eggplant
Tomato Sauce
White Onions
Unsalted Butter
Canola Oil
Basil
Oregano
Kale
Red Wine
Orange Peppers
Portobello Mushrooms
Shredded Mozzarella Cheese
Parsley
