Breakfast is said to be the most important meal of the day. Its cognitive support, and its immediate energy boost are a few of the benefits to having this first meal of the day.
During the week I often hear people explain that they don't have time for breakfast. Or, they have a grab and go breakfast type of lifestyle. Perhaps having breakfast on the go is effective. After all, no one ever created a guideline of "how to" have breakfast. Only that you should have breakfast because it is important.
I absolutely love breakfast. Probably because an egg was the first thing I ever learned how to cook. So for awhile as a kid, breakfast was a few times a day for me (LOL).
One day of week that I know breakfast to be the popular meal of choice is on a Sunday. Interesting that the first and most important meal of the day, is also the most popular meal of the first day of the week! It's so popular that it stretches out to the middle of the afternoon and has taken on the name
"BRUNCH" (LOL)!
When I decided to create and plate this breakfast dish, I was inspired by a "breakfast in bed" concept. Simply stated, I made a poached egg on a bed of sauteed kale, bacon pieces, orange peppers and onions. This plate creates an illusion of a warm, comfortable, snuggled in bed type of energy.
Notice the heart shape in the yoke of the egg!
I call this dish the
"iHeart Easy" ... Enjoy!!!
